This recipe is perfect – it will take you about 5 minutes to make and it is absolutely delicious. I make it for my toddler and she calls it “yummy yum yum”. It is packed with protein and fiber and it has no refined sugars added, making it perfect for the little ones and for adults alike.
Ever since I heard about no-bake balls or energy bites, I`ve been super experimenting with them and there is just nothing better out there when it comes to quick healthy snacks. There are endless possibilities of making your own no-bake bites, but for this recipe, you will need the following:
- dark chocolate
- banana chips
- peanut butter
- old-fashioned oats
- honey
- chia seeds
Since we are mostly for no sugar added products, I`ll always have some really dark chocolate in the pantry. And by dark I mean 95 or 99 % cocoa, which results in a low carb product with almost no sugar and filled with iron. It is so much cheaper and healthier than the chocolate chips I can find here in the store.
A low-carb version bag of chocolate chips is probably 6 times more expensive than a bar of 95 % cocoa fair trade chocolate. So I chose the chocolate for this recipe and processed it into small chunks.
If you are worried about it too bitter and tasting horrible (most extra dark chocolates do), it will actually be good in combination with the other ingredients and your kids will enjoy it.
The peanut butter is a low-carb peanut butter version as well, but you can definitely go with your favorite brand.
The banana chips are organic banana chips from Aldi, slightly fried in coconut oil and sweetened with a bit of unrefined brown sugar. They usually have offers in Aldi in Germany on 300 g bags of these chips for approx. 2,5 $ , so that is when I will personally stack up on a few of these bags.
The actual recipe is actually very easy to make.
You have to first place oats, peanut butter, chia seeds into a bowl.
Then in a food processor, mix the chocolate with the banana chips, until you have small chunks like in the picture below.
Add the composition to the ingredient bowl, add honey and mix with a spoon.
Roll the composition into balls. Or press them into a cookie shape or energy bar. Whatever you feel like it.
Store them in the fridge in an airtight container or freeze them and have a healthy snack handy for later.
I like to freeze energy bites of all kinds, keto and kid-friendly. It is super useful because it helps you have something healthy prepared all the time.
